What do you make for a quick dinner? Easy, simple, fast.

I find chicken fajitas are fast. The crockpot is great--easy and fast. I like to crockpot a whole chicken or make meatballs. Lasagna roll ups are alot faster than making a lasagna. Spagetti, penne etc. is always fast and easy.

I find that when I cook and cook double batches of something that freezes well (pasta sauce, stew, soup, etc.) and freeze them portion-sized, I am never without a quick and healthy meal. It doesn't take much time to make pasta or rice, etc., to add to sauces, and the stews are pretty much meals in themselves.

That's what I do all the time rosebuddy, I make double batches. That way, I can freeze some for quick & easy dinners... also give some to our son (he lives on his own.) Our son really appreciates the frozen donations, because he's always tired after school & work... long days, yet he can eat a healthy/easy meal!

Yes I like to make a big pot of chili and freeze it in portions for later. Also,stew.

Spanish Rice is also quick, tasty & easy (I know my hub & son love it!)

I also make large batches, especially spaghetti sauce. We will have it the first night, set a bit aside and freeze the rest. For the second night, we'll make omelets and use the heated sauce we set aside for the inside. It's delicious.

Good ideas everyone. When I make soup, usually a big pot, I'll freeze a portion for another time.

Aless- yes I do. I am making a new recipe for meringue calling for 5 egg whites,cream of tarter,corn starch. MY family likes lots of meringue.
